5 Easy Holiday Brunches

This winter break lots of us are looking forward to some lazy days.  If you are planning on eating on those lazy days, and perhaps even have some other mouths to feed, cereal in a bowl simply may not cut it for the entire break. Here are some quick and easy ideas for you, in order of effort of course, that may not only set you up for success but with enough effort may even impress!


The mere mention of a continental breakfast may spark disappointment but let’s keep in mind you are not staying at hotel that promised you a full breakfast. An at home continental option provides you with a super easy set up that if you set it up right, can look down right impressive. Hop on over to your local grocery store and grab some fresh made bagels, muffins and pastries. Pair it with various cream cheeses, maybe even pick up some lox if there is someone in your home who would enjoy it. Freshly made donuts and a bowl of fresh fruit to round out your store bought but impressive looking spread.

Quick and Easy

If you want to serve something warm but simply do not have the energy to put into something more elaborate, do not underestimate the power of scrambled eggs and bacon. Scramble some eggs, throw them in the frying pan, throw some cheese in if you are feeling fancy and you got yourself a main course! Worried about cooking eggs and bacon on the stovetop at the same time? Throw the bacon IN the oven! Yes it is true that you can indeed bake bacon. Simply preheat your over to 400 degrees, throw that bacon in a single layer on a cookie sheet, and just about 12 minutes later you got yourself some a delish pork treat. Want it crispy? Just leave it in longer! No muss, no fuss and you have the opportunity to focus on just your eggs as they cook on the stovetop.

Make Your Own Breakfast Sandwich Buffet

Everyone must love a breakfast sandwich or they should probably leave.  Provide your guests with a taste of their favorite diner by setting up a buffet of sorts for them to make their own meal.  Now you will need to actually cook up some eggs and bacon or sausage for this plan, but it will be well worth it in the end. Set up your toaster oven with some bread and butter nearby.  Have a station with the scrambled eggs and another with the breakfast meat, throw some condiments and napkins at the end and you got yourself a buffet!

Overnight Breakfast Casserole

If you have a slow cooker you can let breakfast cook while you sleep! Decide what you might want to put into your casserole as far as meats and veggies go and lay everything out. I say use all the breakfast meats so let’s grab a frying pan and cook up some bacon, sausage, and even chop up half an onion and throw it in there as well. Once the meat has been cooked and the onions look softened, drain off the excess fat. Now Danielle Walker of Against All Grain fame suggests packing the bottom of the slow cooker with shredded sweet potato but you can use regular potato, or none even. It will cook regardless. Add the meat and onion you cooked earlier and any other vegetables you might like to include like bell peppers for example. Whisk up 16 large eggs, ½ cup milk, 1 tsp salt, a dash of pepper and pour in the slow cooker. Cover and cook on low for 6 – 8 hours. At that point switch the temperature to warm and everyone can serve themselves at their leisure.

Egg Muffins

If you have a muffin tin and don’t mind putting in the effort, this is going to be your new favorite dish courtesy of Suzanne Ryan’s Simply Keto. Preheat the oven to 350 degrees and line the muffin cups with either muffin liners or butter. Boil 1 cup of broccoli until soft then cut into small pieces. Fry up 3 slices of bacon, set aside to cool before chopping. Whisk up 6 eggs, add ½ teaspoon of salt, a dash of pepper and garlic powder, even some hot sauce if you like. Evenly distribute the broccoli and the bacon into the muffin tins, then the same with the eggs. Add some cheese if you like things that taste good then bake for 20 – 25 minutes. Serve once the eggs look cooked.
